Lunchbox Veggie Fried Rice
Place jasmine rice right in the microwave for 3:50.
Add diced carrots, celery, edamame, peas and corn into a sauté pan with olive oil and just a splash of water to create steam. Stir them around and place the lid on. Let them cook for about 3-5 minutes until they are softened up.
Once they are soft, add in your butter, garlic powder and soy sauce and stir to combine flavors.
Finally, crack one egg over the top and stir it around until it starts to scramble and coat all your veggies and rice.
