How to Shuck an Oyster
Locate the hinge at the base of the shell.
Stick the tip of your knife in the hinge.
Hold the oyster in a dish towel so it doesn’t slip.
Turn the knife like a ‘key’ to release the hinge.
Wiggle your knife all the way around until it opens.
Cut the muscle off the top shell.
Run your knife around the edge to release the oyster from the bottom shell.
Place oysters on a bed of crushed ice.
Garnish with lemons, and add mignonette sauce in the center of the platter.
