Pumpkin Spice Latte Mug Cake Affogato
In a medium bowl combine together the flour, sugar, baking powder, salt and pumpkin pie spice. In a small bowl, whisk together the egg, almond milk, pumpkin and vanilla. Add the pumpkin mixture to the flour mixture and stir until smooth. Transfer the batter to the mug and microwave on high for 1min 30 seconds. Carefully remove the mug from the microwave. Top with ice cream and pour over hot espresso.
