Orzo with Beets and Arugula
Cook orzo as directed then rinse under cold water to cool it off.
Slice beets into quarters and add to the orzo.
Add in Arugula, cranberries, feta cheese and pine nuts.
Drizzle in your olive oil and finish off with salt, pepper and lemon zest.
