Preheat to 325°F. Line a rimmed baking sheet with parchment paper.
In a large bowl, whisk together honey, coconut oil, and vanilla, until well blended. Stir in oats, pecans, brown sugar, cinnamon, nutmeg, and salt. Spread on baking sheet. Bale 35-40 minutes, stirring halfway thru. Remove from oven stir in shredded coconut and banana chips, mix well. Let the granola cool completely on the pan.
In a glass layer granola and yogurt several times, to create layers. Serve Immediately.
BLT Avocado Toast
Top each slice of bread with avocado, gently mash. Sprinkle with lime juice, salt, and chili flakes. Layer 2 slices of tomato on each piece of bread. Top with Bacon slices and basil. Serve.
Peanut Butter & Jelly Smoothie
In a blender add almond milk, strawberries, banana, peanut butter and honey. Puree until completely smooth. Pour into glass and drink immediately.
